Pets de Nonne
Fritters (or nuns’ fart)
Ingredients

- 90g

- Flour
- Water
- Butter
- Caster sugar
- Eggs
- Orange water
- Salt
- Icing sugar
Cook
- Place butter, caster sugar and orange water in saucepan
- Add water
- Bring to boil
- Simmer till all ingredients are melted
- Remove from heat
- Add sieved flour
- Stir with wooden spoon energetically
- Return to low heat still stirring
- Stir till the dough no longer sticks to the pan
- Immediately turn dough into mixing bowl
- Add the eggs
- With rubber spatula incorporate eggs into the dough
- Leave to rest for 30 minutes
- Heat oil to 160c
- Take a good rounded teaspoon of dough
- Place in fryer
- Depending the size of your fryer place more (beware they will greatly gain in volume)
- Using slotted spoon turn the fritters till golden (2 to 3 minutes)
- Keep going till there is no more dough
- Sieve icing sugar over fritters
- Eat at room temperature
