Fritters (or nuns’ fart)
Ingredients
  • 190g
  • 375cl
  • 90g
  • 8g

  • 1.5tsp

  • Flour
  • Water
  • Butter
  • Caster sugar
  • Eggs
  • Orange water
  • Salt
  • Icing sugar
Cook
  1. Place butter, caster sugar and orange water in saucepan
  2. Add water
  3. Bring to boil
  4. Simmer till all ingredients are melted
  5. Remove from heat
  6. Add sieved flour
  7. Stir with wooden spoon energetically
  8. Return to low heat still stirring
  9. Stir till the dough no longer sticks to the pan
  10. Immediately turn dough into mixing bowl
  11. Add the eggs
  12. With rubber spatula incorporate eggs into the dough
  13. Leave to rest for 30 minutes
  14. Heat oil to 160c
  15. Take a good rounded teaspoon of dough
  16. Place in fryer
  17. Depending the size of your fryer place more (beware they will greatly gain in volume)
  18. Using slotted spoon turn the fritters till golden (2 to 3 minutes)
  19. Keep going till there is no more dough
  20. Sieve icing sugar over fritters
  21. Eat at room temperature
