Welcome to our very first Newsletter, where we keep you up-to-date with what’s happening in the world of Brasserie Blanc, as well as sharing my tips of the trade and favourite recipes, inspired by Maman Blanc. Sourcing fresh, seasonal produce is something we take very seriously at Brasserie Blanc and we’ll be visiting local producers, as well as discovering the best, seasonal produce available at this time of year.

For me personally, 2008 has been a vintage year - with the exciting launch of two new Brasseries in the historic cities of Winchester and Bristol. Lady Taverners

The Brasserie Blanc group of restaurants has chosen the Lady Taverners as its charity for the year - aiming to buy specially adapted mini-buses for children with special needs. With funds raised, the charity also donates money to many sporting and recreational activities, including the development of playgrounds, sensory rooms.  READ MORE »

Milton Keynes wins best Business Lunch Award...

We are delighted to announce that Brasserie Blanc, Milton Keynes has recently won MKWeb BEST BUSINESS LUNCH AWARD.

At an awards ceremony held at the Ramada Encore in the HubMK, the winners of the Restaurant of the Year were announced. Over 30,000 votes were cast by the people of Milton Keynes and area in this exciting competition. The overall winner was Las Iguanas who also picked up the award for best newcomer.

Judges commented that the dishes from Brasserie Blanc’s a la carte menu were “Well prepared and presented. Of particular merit was the fact that the steak ordered was well trimmed and cooked exactly as requested, the service was reliable and efficient with lots of smiles and the atmosphere is very relaxed, light and airy - very much in keeping with the French brasserie theme. This venue represented very good value by way of the set lunch with wine but also had an extensive wine list with prices that were reasonable within all categories”.

Stephen Murray from MKWeb spoke to Valerie Lemetaye, GM and commented “This award is truly deserved, and by your reaction, it simply showed how much effort you’ve put in to serving great food, with great service and within a great atmosphere”

The perfect avocado...
Boiling an avocado for 10 seconds, then plunging it into iced water will reduce the discoloration when sliced.

Jerusalem artichokes

The misnamed Jerusalem artichoke has no real link with Jerusalem, and isn't related to other artichokes. It looks a bit like a knobbly pink-skinned ginger root and has a sweet, nutty flavour, reminiscent of water chestnuts.

Pumpkins & Squashes

Squashes, are great additions to the kitchen at this time of year. As the autumn and winter squashes come into season (replacing summer squashes, such as the courgette), their nutty sweetness is ideal in warming soups, curries and roasts.

Chestnuts

Chestnuts trees have grown across China and Japan since ancient times. The Greeks brought them to Europe from Asia Minor and later they spread across the continent with the Romans.
