I thought it would be a nice idea to add one of my simple seasonal recipes; something that can’t be made at any other time and will always remind me of a specific time of year. Pumpkin soup is just that, a hearty but not heavy soup, just the colour is autumnal.
Soup au potiron - Pumpkin soup (Serves 4)
Equipment required (equipment necessaire)
Large sauce pan and lid
Wooden spoon
Large knife
Chopping board
Blender
Ingredients
1 kg pumpkin (peeled and cubed)
1 leek (white only) halved and sliced
Sprig of thyme
10 cl crème fraiche
10 g butter
Water
Tsp salt
Pinch pepper
Cook
- Melt butter in pan
- Add leeks
- On a low heat stir leeks till translucent
- Add pumpkin cubes, thyme, salt and pepper
- Just cover with water
- Place a lid on the saucepan
- Simmer for 30- 40 minutes till the pumpkin is tender
- Remove thyme spring
- Add crème fraiche
- Blend
Serve.
You can add croutons but I prefer a large slab of bread and butter. To make it more elegant a shot of kirsch will liven things up.
